Abstract

For companies to increase profit, specific goals are implemented. One of the few ways to increase profit is to implement lean. The implementation of lean concept is widely regarded not only in the world of manufacturing, but also in other field, including catering industry. One of the tools used to achieve the state of lean is value stream mapping. The value stream map helps to outline a production process by using the current state map to visualize point of waste in current process. However, the result of a current state map requires justification, which is where simulation software comes in. The range of tools and applications in thee software will provide a broader range of results. The analysis will lay a foundation for improvements, in which the future state map is used to visualize the results of possible improvements that are suggested. The results of both simulations will be outlined to show the increase of profit that could be made. The value stream map will outline the production process of airline meals in a airline catering company.
