Abstract

Nowadays, people are more exposed to free radicals that can harm their health. Therefore antioxidant needed to remove free radical intermediates. One possible strategy to combat free radical in society is the fortification of antioxidant in an affordable food, such as hard candy. This study was designed to assess the effect of different concentration of citric acid (0%, 2%, and 3%) and the timing of the grape seed extract application in hard candy (before and after candy making process) with respect to antioxidant activity and total phenol content. The presence of citric acid in grape seed extract in hard candy degrade the antioxidant activity and total phenol content. The different timing of the grape seed extract application in hard candy resulted the same effect of deterioration to antioxidant activity. However, the total phenol content degrade significantly. The antioxidant activity of grape seed extract in hard candy is stable for 14 days of storage.
