Abstract
The sustainability of the local food are really important to keep the identity of the city and country. In this globalizing era, enriched with the vast improvement that may impacted the authenticity of the local food. To develop the local restaurant in Bandung it is necessary to understand the consumer satisfaction, demand and factor that impacted. This research aim to find out the customer satisfaction, the current expection and demand toward local food in Bandung.The reaserch collected 95 of surveys from locals and tourist. Then compare between literature review that collected and the result of the primary research by applying descriptive explanatory concept in this case using standard deviation and mean. The result of this study show the satisfation of the customer is influnce by location, price and quality of the food. Other result tell us that the local food demand in Bandung is still high. However, the local food in Bandung now lack of authenticity since there is a lot of influece by foreign food. Recomendation giving by the research are for the restaurant business owner for keep the authenticity of thelocal food and further research needed by the scholars.
