Abstract
Development of natural colorant has been popular and explored further for its source. Natural colorant is more preferable compared to the synthetic one regarding with the issue of health risk from the chemical source. Morning glory (Ipomoea tricolor) flower as a potential source of anthocyanin as a natural colorant was studied to find the most influencing factors related with the pre-treatment and extraction process using Fractional Factorial Design. Seven factors of blanching time, drying method, extraction time, extraction temperature, solvent extraction (pH), solvent ratio, and light exposure were studied to find the optimum condition and continued with the most influential factors analyzed by using Response Surface Methodology. Three factors of blanching time (9-12 minutes), extraction time (30-60 minutes), and extraction temperature (30°C-60°C) were studied on the following responses of color intensity, total anthocyanin, browning index, total phenolic content, and antioxidant activity. Extraction temperature was studied to be the most significant factor toward the responses. The optimum extraction condition for morning glory flower founded in blanching time 10.5 minutes with extraction time 60 minutes and extraction temperature 58°C.
