Abstract

Food safety is not tolerable. Every food related business shall pay attention to it. Accordingly NASA had developed a system called HACCP that can ensure safe food production. The main purpose of this study is to identify how far the restaurant at Flavor Bliss Alam Sutera Tangerang can comply with the principles of HACCP in ensuring food safety. Secondly, the study also takes a look at the customer side, at what level they prioritized food safety in selecting restaurants which are correlated between customers’ perception on food safety. Three days observation at each restaurant and in-depth interview had been done to gather information needed. Customers’ related information is collected through questionnaires. According to the analysis results, the restaurants’ hard works are not yet enough to ensure safe food production. From the customer side, food safety does not contribute significant impact to their restaurant selection preferences. There are some other factor(s) that greatly influence their preference. However, if their experience and knowledge about food safety are improved, accordingly their preference level of food safety will also show significant improvement. Since food safety is basic requirements of food consumption, it is recommended to apply food safety management system (HACCP) in all restaurants and sequentially socialize food safety to all restaurant customers.
